Course Syllabus
Welcome to the West Sound Technical Skills Center's Culinary Arts Food Service Program.
The Food Service & Culinary Arts Program is an exciting, interesting, demanding and professional culinary class. This is a 2-year course with 1,080 hours of instruction and there is a strong emphasis on Professionalism, Leadership and Employability skills. Students develop marketable skills in all aspects of food production and service using the latest methods and techniques.
We hope you are up for the task, it requires dedication, teamwork, lots of physical stamina and the ability to multi-task that is required in the food service industry.
Students will have the opportunity to participate in several specific public events, luncheons and school events, as well as working in our Three Seasons Deli and Restaurant.
Completers of this program will receive:
- 5-year National Restaurant Association ServSafe Certification
- American Culinary Federation Secondary Certification
Because we are constantly in the eye of the public and a high degree of professionalism is required in the kitchen, we are requiring all students to purchase their own uniforms. We have chosen 1 uniform company, (New Chefs Fashion California). Printable order forms are at the bottom of this page.

They have helped us with the best price for our chef’s jacket. The jacket is $20.00, it will come with your name (full name please), our logo and program name. You can order just the jacket from them and purchase the rest of the uniform requirements locally. That is your choice. I would suggest purchasing at least 2 chef’s jackets, because of the sanitation and professionalism requirements in the class. We conduct uniform and personal hygiene inspections as part of our grading policy. We have recently become accredited by the American Culinary Federation: www.acfchefs.org. West Sound Technical Skills Center's Culinary Arts/Food Service
It is our desire to make this a pleasurable learning experience. This is a 2-year course with 1080 hours of instruction. We ask that all parents or guardians read the course syllabus so that they may understand the monthly assignments that are due and that the student adheres to the standards of safety and sanitation.
To follow these guidelines, it is of the utmost importance that students receive a valid Kitsap County Food Handler’s Permit and the proper uniforms for their first day of school.
ATTENDANCE:
This course is for credit and it is expected that students will be in attendance each day.
GRADING:
Grade is weighted by:
- 30% skills
- 40% employability skills
- 30% academic
PARTICIPATION:
All students are expected to actively participate. Just being present and warming a chair will not be acceptable.
ATTITUDE & ENTHUSIASM:
A positive attitude is expected at all times. Students are expected to be enthusiastic in learning about the culinary arts profession.
UNIFORM REQUIREMENTS:
Cooks jacket w/ your name and WST logo
Black pants, black shoes and black socks
White apron and white hat
All uniforms should be clean, free of stains, and wrinkle free
PERSONAL HYGIENE:
All students must bathe daily, have clean hair and no hair showing below the collar line. No jewelry or visible body piercings are allowed.
Students failing to abide by the Kitsap County Health Department and or the American Culinary Federation standards will be:
1st offense: Students will be sent to the learning center and a behavior contract will need to be signed by parent or guardian before returning to class.
2nd offense: Parent conference before returning to class.
3rd offense: Dismissal from program.
EFFORT:
All students will be expected to give 100% effort in this class.
COURSE CONTENT:
Students will work and learn in teams. Most students work in an assigned area and rotate every two weeks. The areas of skills are Pantry, Bakery, Cooking, Deli, Dining Room, Classroom and Dish Room stations.
RESPECT:
All participants in this program will show mutual respect. Disrespect is not acceptable. It must be understood that there are students of different backgrounds, cultures and academic levels in this class. No put downs or “dissing” will be allowed.
FOOD HANDLERS PERMIT:
All students are required to obtain a Kitsap County Food Handlers Permit before entering the class. Check the white pages in the phone book for your nearest County Health Department. The fee for your permit is $8.00.
FIELD TRIPS:
The instructor has planned to take field trips during this program. There may also be occasions for the class to leave campus if instructional opportunities are present. It is expected that all students will participate in all field trips. Permission slips are necessary and need to be signed by parents, teachers and your sending school attendance office. Each field trip has a dress code, therefore, all students should wear professional business attire when attending our field trips.
Student requirements before entering the class (Day 1):
- Obtain a County Food Handlers Permit
- Have all uniform items ready to wear
- Parent and student content document signed
- Safety pledge signature

Please familiarize yourself with the content. It is a helpful guide for both parents and students. There is a safety document and a final signature document for parent and student to sign once the student has read this page and all documents below. Students will not be allowed to participate without the required documents signed and returned.
